Chocolate Tahini Rice Krispies Treat
The 3 p.m. chocolate craving is fierce. I try to quell it with a date, an apple, a sliver of halva but nope, no, it persists regardless. It’s not that I wish to avoid it, it’s just that if there isn’t something wholesome, clean if you will, around me then a hazelnut milk chocolate square turns into… We don’t need to discuss that. Which is why I’m always looking for treats that store well in the freezer. That way my supply of something sweet and chocolately is never low and I can reach for a nibble of something delicious my body agrees with. I’m aware there are quite a few chocolate desserts and snacks around here. I don’t plan on turning away from that. I just believe in chocolate, it’s that simple.
This recipe is loosely based off of these balls. Don’t ask me to choose which one is better. I love them both. I will say that the tahini in here lends a bitterness that is less enjoyed by kids but to me balances the flavors perfectly. It comes together quickly so a stash in the freezer at all times is reasonable. For that 3 p.m. craving.
Chocolate Tahini Rice Krispies Treat
4x4 pan or loaf tin
ingredients
1/2 cup plus 1 tablespoon tahini paste
1/4 cup water
1/2 cup honey
1 tsp coconut oil
100g chocolate
1 tablespoon boiling water
pinch of sea salt
3 cups brown rice cereal
Directions
Line 4x4 square pan or loaf pan with parchment paper. Mix tahini, water, and honey until a smooth paste forms. Works fastest in a small blender. In a small saucepan, melt coconut oil and chocolate. In a medium bowl, combine tahini mixture with chocolate. Mix in boiling water and salt. Stir in cereal and mix to coat. Press into pan and cover with plastic wrap. Freeze for 1 hour. Cut into squares and serve. Store in the freezer.
