Simply Refreshing Fruit Salad

I can’t believe I’m posting this as a recipe but I see it as a mere suggestion. There’s nothing more refreshing than a cool fruit salad as spring is inching closer to summer. It’s perfect for breakfast or dessert, or a snack, or anytime. And it's a fun way for everyone to eat more fruit instead of cake! Actually, there’s always room for both.

You can use any fruit you like here and thankfully there is a large variety popping up at the markets. This salad is the perfect way to highlight your favorite sweet, juicy fruits. And the colorful palette makes it particularly attractive to the younger crowd. Those picky kids will love it.


Simply Refreshing Fruit Salad

Ingredients

1 pineapple, cubed

½ melon, cubed

1 apple, cored and cubed

1 cup cherries, pitted and sliced

1 cup green grapes, cut into quarters

2-3 cups orange juice

Directions

Combine the fruit in a medium bowl. Pour enough orange juice to cover the fruit. Wrap with plastic wrap and refrigerate until cold.
